I call it kind of brand loyalty. Here’s what I mean: whenever Kate Bush releases an album (and the good Lord knows she doesn’t do it often enough), I buy it. Just as I’ll read anything Mary Roach writes, if only in the hopes that her sense of humor will rub off on me; I always end up learning a whole heck of a lot, too. And, whenever I get wind that Kathy Hester has a new cookbook in the pipes, I get my virtual arse over to Amazon and pre-order it. It really doesn’t matter what the subject matter is – I know it’ll be more than good. Happily, Kathy has been steadily providing us hungry vegans with delicious, nutritious, easy, and comforting recipes and her latest book, Vegan Slow Cooking for Two (or Just for You) is another book for which to feel undying fealty. This one speaks especially to me since besides our furry friend, Ike, there are just two in my household. While leftovers are great, there are times you just want enough for one meal. And you want to put the ingredients in a slow cooker and let it do the work.
As with Kathy’s other two books (The Vegan Slow Cooker, The Great Vegan Bean Book), I gave this one a thorough test drive. Life is rough, isn’t it? Let’s take a look under the hood:

- 1/2 cup steel-cut oats
- 2 cups unsweetened non-dairy milk
- 1/2 cup chopped dry figs
- 1/4 tsp. cardamom
- 1/4 tsp. orange flower water, food grade, optional
- 1/2 vanilla bean, scraped, or 1 tsp. vanilla extract
- 1 Tbsp. each chopped pistachios, walnuts, and almonds
- 1 Tbsp. agave nectar
- Pinch cinnamon
- Spray your crock with oil to help with cleanup later or skip it and just plan on soaking your crock immediately afterward so any stuck-on oatmeal will come right off. Add everything except the topping ingredients to the slow cooker. In a small bowl, mix together the topping ingredients and store in the fridge until the morning. Cook the oatmeal on low for 7 to 9 hours.
- Stir your oatmeal well. It may seem watery on top, but if stirred, it should become a more uniform consistency. Top each serving with a few teaspoons of the baklava topping, making it as sweet as you like it.
- Recipe shared with permission from Kathy Hester and Fair Winds Press.

These recipes look so yummy! I need to try at least one a week with my kids. I think they would love this!
Think of the anticipation! Definitely kid-friendly.
Nope…uh, no, never made a cookie in a slow cooker. I have 4 kids so that just wasn’t an option across the years, even if I had had a marvelous recipe for one! lol The fighting over that one cookie would not be pretty in a family of sweet fanatics. Now that the empty nest is drawing closer, I will want to try it. 🙂
Definitely don’t want any brawls! Maybe you could make a giant cookie in a really big slow cooker ;-)!
No. I have not made a cookie in the slow cooker, but I intend to remedy that situation as soon as I can. Kathy is so creative.
She is! I keep thinking of all the different cookie combinations one could make…
A cookie in a slow cooker? Never, but I’m so eager to try it now.
I was kinda scared the first time I tried it ;-).
I follow an unrefined vegan.

I’ve never made a cookie in the slow cooker, and I’m afraid this information might be dangerous – I’d be tempted to set it the night before and wake up to a breakfast cookie 🙂
Totally dangerous…

They come out so good!!
slow cooker cookie? what a concept… guess I am going to learn something new and looking forward to it!
Think of all the varieties of cookies you can try…
What is it with Kate Bush eh? My grouchy old curmugeon of a dad who didn’t like ANYTHING loved Kate Bush and asked my daughters to get him a C.D. of her greatest hits for Christmas! I might slowly be turning into a feminine version of my dad as I age and Cathy Hesters Vanilla Fig Oatmeal with Baklava Topping might just be my own personal “Kate Bush” moment! Gotta make this ASAP! Cheers for sharing Annie 🙂
Kate Bush is wonderful! Your dad had excellent taste in music, Fran!
Kate Bush and Wagner…dad’s 2 musical besties 😉
No I have never made a cookie in a slow cooker! Didn’t even know such a thing existed til now 😉
I know! It was (delicious) news to me, too!
I’ve never made a cookie, or any dessert, in a crockpot. I really want to try it!
It’s a whole new world!
Lorna, you have a good eye (and taste buds)!
I read this as “vanilla baked oatmeal with baked lava topping.” I thought, “Ooooo!!! What is ‘baked lava topping?!?'” ….ha, yay dyslexia! 🙂 I’m pretty sure baklava topping is far tastier anyway. 😉 PS I found this post especially delightful to read. Loved it when you said that part about “take a test drive–look under the hood.” 🙂 Nice!
I don’t know – if the lava were melted chocolate – I’d be all over that! Thanks, Jessica!
I have never made a cookie in a slow cooker, didn’t even know you could! Wow!
It’s the coolest ;-)!
I’ve never made a cookie in a crock pot but it would be fun to try it. I’ve got two small crock pots so I’d love t have this cook book!

Slow cooker cookie? That would be a slookie.

I’m sensing a cookie-in-the-slow-cooker revolution…
I sooo need to use my crockpot more….
We are getting very close to prime slow cooker season, too!

Oooh – shortbread! One of my favorites!
I’ve always wanted to buy a slow cooker. And looking at Kathy’s books/recipes makes me want it more. We don’t get any here in India. 🙁 I wish we had special vessles which could be placed on gas stove tops and used as slow cookers.
I can’t believe you’re continuing to blog directly after MoFo, girl! haha
I think you need to invent a stove top slow cooker, Susmitha! Great idea.
Truly I would have taken a break but these past few giveaways were scheduled so what could I do :-)? I’m going to take a break after the Potluck.
Oh my gosh! This recipe combines EVERY one of my favorite flavors ( okay, except chocolate and coconut!:) I adore vanilla, figs and cinnamon, and have really been into oats lately. My mom and I are taking a trip tomorrow to the mountains and this will be the perfect breakfast to enjoy before we go!:)THANK YOU for the inspiration!!!
Hmmmm, now you have me thinking. Stir some chocolate chips and shredded coconut in there – sounds good!
I haven’t made slow cooker cookies…it would be fun to make Kathy’s “Chocolate Chip Cookies For Two” with some vegan peanut butter chips in the mix. Yumza!
The possibilities are endless…sigh…
Haha! You sound like me. I just made Kathy’s rice pudding for two – and ate all of it myself!
