The Festive Kale Salad recipe that I’m honored to share below is included in the DVD set. The simple, healthful ingredients for this salad come together to create a dish that is tart, tangy, sweet, and full of flavor. This is a great way to eat kale and Laura’s salad has quickly become a staple in my household.

- 3 Tbsp. freshly squeezed lemon juice
- 3 Tbsp. maple syrup
- 6-8 cups very thinly sliced, lightly packed curly kale, washed and dried
- 1/2 cup dried cranberries or dried cherries
- 1/3 cup chopped walnuts
- Sea salt, to taste (optional)
- Freshly ground pepper, to taste (optional)
- To make the dressing, put the lemon juice and maple syrup in a small bowl and briskly whisk until smooth.
- Put the kale, cranberries (or cherries), and walnuts in a large bowl. Pour about three-quarters of the dressing over the salad and toss gently until the kale, cranberries (or cherries), and walnuts are evenly coated. Taste and add the remaining dressing, if desired.
- Cover and let stand at room temperature for about 20 minutes before serving. Just before serving, top with a few grinds of sea salt and pepper, if desired.

My husband and I watch cooking shows all the time. If the show is not Vegetarian or Vegan based, which few are, we love to talk about what we would do to make the meal Vegan. Sometimes we make it!

I love watching Laura Theodore, the Jazzy Vegetarian, on my local PBS station! I also enjoy watching Pati Jinich’s Pati’s Mexican Table, also on my local PBS station, and my husband and I also enjoy watching Gordon Ramsey’s shows. What I love about Jazzy Vegetarian is that the food is already vegan–no extra effort to adapt or convert or substitute is required!

I watch Jazzy Vegetarian cooking show whenever possible. I have learned so many new and different ways to prepare healthy vibrant foods. Yes, I enjoy watching cooking shows. However, I enjoy vegan cooking shows a lot more, & those like Jazzy’s are few and far between.
