Sweet Potato Apple Pie Ice Cream by An Unrefined Vegan

Ice Cream
  1. 3 bananas, cut into chunks and frozen
  2. 1 sweet apple (I use Honeycrisp), cored, cut into chunks and frozen
  3. 1 cup roasted sweet potato, cut into chunks and frozen
  4. 5 dates, chopped and soaked in water for about 15 minutes; drained
  5. 1 cup non-dairy milk (I use soy)
  6. 1 tsp. vanilla extract
  7. 1 tsp. cinnamon
  8. 1/4 tsp. cardamom
  9. 1/4 tsp. ground ginger
  10. pinch allspice
Streusel
  1. 4 Tbsp. rolled oats
  2. 4 Tbsp. chopped pecans
  3. 3 Tbsp. pure maple syrup
Make the streusel
  1. In a small pan, lightly toast the rolled oats and the pecans. Remove from the heat and put into a small bowl. Stir in the maple syrup. Set aside until ready to use.
Make the ice cream
  1. Combine all of the ice cream ingredients in the bowl of a food processor and process until very smooth and creamy. This requires some patience and much stirring with a spatula to move the frozen chunks around. It will eventually become soft and silky.
  2. Divide ice cream into bowls and top generously with streusel. Consume immediately!

    I just read the guest post! That is one beautiful ice cream Annie! I have used sweet potato just one time in my chocolate peppermint ice cream. It really does work to add sweetness. I love your take on these flavors of apple pie and turning it into ice cream! Delish!
