I’m celebrating my blog’s one year birthday (which was October 21) by giving away a copy of Kathy Hester’s cookbook, The Slow Cooker Vegan. I won’t be giving away my much-used copy, however. Kathy has generously offered to send a pristine copy directly to the winner of this giveaway.
I’ve been cooking from Kathy’s book for a while now and have talked it up in some earlier posts like Other People’s Food (& Drink) Part 2 and Maple Pumpkin Spice Latte (for the Slow Cooker). That’s why I’m especially pleased to be offering a copy of this wonderful resource. One could cook from this book all year long. Kathy makes everything, and I mean everything in the slow cooker: brownies, fondue, beverages, seitan, granola, smoked tofu and of course, oatmeal, soups, stews and curries. I have it direct from the source that she owns 20 (maybe more?) slow cookers. Puts my measly three to shame.

Okay, now you’ve got me going. I’ve only just cracked open my copy and made one recipe. I can see this book is going to be a winter staple!!! Everything looks so good!!!
Everything I’ve made so far – and that has been quite a few things – have been delicious. Plus I always feel very self-satisfied knowing something is cooking away while I’m doing something else ;-).
That’s the brilliance of slow cookers! And hence the reason you and I own multiples…. 😉

I’m new to vegan cooking. – and still am looking for ideas. – I have a slow cooker and think this book would be something I would use, since I hear great reviews and the pictures here look delicious.
Catherine, it’s a really good one to have in your vegan cookbook arsenal! I love being able to put everything in the pot, turn it on and forget about it until dinner (or lunch…or breakfast). Plus Kathy is a sweetheart ;-).
This would be the perfect excuse to purchase a new slow cooker! Our old one is, well, old. It works fine, so I haven’t been able to convince the hubs we need a new one, but if I started using it more, I could probably convince him of the benefits of a timer and better temp control. (Our current ancient model only has off, low, and high.)
Here’s the thing…this book convinced me that I needed big, medium and small slow cookers…Oy. I use them ALL, though! Anyway – good luck getting a newer model (not the hubs, the slow cooker 😉 )!

I know what you mean, Laura – which is why I had to try the brownies. I was pleased w/ the results and will probably try one of the cakes next. I think my favorite might be the hot beverages.

I checked this out from the library but it was summer so I didn’t really take advantage of it. I think I may need it for thanksgiving. I hear there’s going to be a lot of great food to enjoy!
And yes, I have baked several things in a slow cooker – cakes, breads, bread puddings…yummy.
Apparently I need to bake some bread in mine! Bread pudding – that totally makes sense.

my brain doesn’t process recipes’ too well but that’s what i have my husband for (i do better watching videos)– this is a great thing! i have done the slow cooking with meat when i ate it and cooking beans but mostly since i became a herbivore i only use it for beans. good to know there’s so much more i could be using it for!

I really really want this book! I love the idea of the crock pot, and I have one, but I always forget about it and never really use it. I want to, though! Whenever I do, I am always amazed at how easy whatever I made was, lol. I have never made a cake in it before…I have seen recipes for them, but I have always wondered if it would really work?? I would love to try it

I’ve never baked a cake in a slow cooker, but my husband is always telling me about the black forest cakes he used to make in a camping dutch oven. I should suggest he try it in the slow cooker!

I love my slow cooker and have lost a lot of motivation for making dinner! What you’ve made and shared with us looks pretty great!

This book has been on my covet list for a while. I used a slowcooker a lot more before we went plant-based, I guess I was at a loss for ideas. I’ve recently come up with several recipes I want to try but I’ve never made a cake or anything sweet except oatmeal in my slow cooker.
I love that this book covers it all. If you don’t win the copy, it’s definitely worth picking up to add to your library.

Just used my crockpot for the first time ever. sat in the kitchen and watched it for at least 3 hours thinking it was going to set fire or explode. hahah i think i will relax eventually though
I know exactly how you felt – – I did the same thing recently with an old slow cooker that I’d never used before. The sides felt unusually hot so I had a big space cleared all around it “just in case.” Thankfully, it worked just fine.

Apparently I get a Rafflecopter Merit Badge or something for saying whether I ever made a cake in a slow cooker, so: I just made this stuff with the exact texture of cornbread. Only it was supposed to be vegan meatloaf! So you be the judge, folks. 😉 And will this UK expat be debarred from Thanksgiving dinner for suggesting that cornbread is “cake”??
