Along with that little bit of leftover chipotle in adobo and that smidgen of tomato paste, I inevitably end up with some pumpkin puree after opening up a can. This drink was born when Kel brought in a huge pile of carrots – the last ones from the greenhouse harvested before it got too hot – and that forlorn scoop of pumpkin puree chiding me from its glass container in the refrigerator.

Delicious! I LOVE pumpkin + carrots and chow them every day in mass quantities, so this a wonderful addition to my daily intake (even though I turn orange/yellow afterwards…whoops!). Also, your background/setting is beautiful. 🙂
I haven’t worked up to turning orange yet, but it’s a worthy goal :-)!
Love the addition of ginger…I’m kind of obsessed with ginger and must have it daily!
I love it, too! And so good for us!
Ah, yes. I always end up with plenty of pumpkin left after popping open a can. I will need to try this because it sounds amazing. Also, this post got me VERY excited for fall.
ME, TOO!! I need fall!
such gorgeous color! looks even prettier against the blue. looks like you are going good with the book and back to blogging 🙂
I had this one in Drafts for a long time :-P!
I love the coconut combo with the ginger and heck, I’d drink this up just for the colors alone! Homemade carrot juice is so easy, it’s a real shame to buy it in the store, especially when you can vamp it up like this 😉
We were lucky to have a great crop of carrots this spring – they were so sweet!
yum this looks great! the colour is so vibrant.. you can never go wrong with carrots and pumpkin.
Thanks, Thalia! Agreed – – and it’s a little taste of fall in the middle of summer :-).
Yum yum yumm! A great healthy drink to add the leftover canned pumpkin! Yumm! 🙂
One has to get very crafty with leftovers :-)!
This looks amazing! I love the vibrant color you’ve got going.
Wow this is such an AMAZING colour Annie!! Sorry I’ve been so absent lately, but I’m back 🙂
Hey lady! No apologies necessary. We all step away from time to time – – but I’m happy to “see” you! Hope all is well.
What a stunning colour and so delicious 😀
Cheers

It’s pretty darn tasty, if I may say so myself ;-)!
