Spicy Chipotle Dressing An Unrefined Vegan

The past few days I’ve had one recipe failure after another: the waffles stuck to the non-stick iron; the gluten-free cupcakes turned into spongy hockey pucks; the pecans burned in the pan, and the “creamy” pasta sauce turned to glue.  Bad kitchen mojo for me right now so best stick with the basics.  This is one of my “standard” salad dressings – with a little bit of a kick – and it’s nearly impossible to screw up.

Ingredients
  1. 1/2 cup water
  2. 1/4 cup apple cider vinegar
  3. juice of 1 lime
  4. 1 tbsp. raw pepitas
  5. 1/2 cup raw cashews
  6. 1 Tbsp. hemp seeds
  7. 1/2 Tbsp. nutritional yeast
  8. 1 tsp. chipotle in adobo (or more if you like it very hot)
  9. 1 tsp. onion powder
  10. 2 cloves garlic, minced
  11. 1/2 tsp. cumin
  12. 1/4 tsp. chile powder
  13. 1/4 tsp. smoked paprika
Instructions
  1. Combine all ingredients in a blender and process until very smooth. This dressing gets hotter over time.

    I sympathise with the kitchen disasters, it can be very disheartening at times. I’ve twice made a ‘fail me never’ gingerbread recipe that’s failed me both times! My mum says it’s one of the best recipes she’s ever come across and she’s made it loads of times perfectly. I don’t know what I’m doing wrong but I think it’s back to safe scone territory for me.

    I hear ya Annie! I think we all have days like that and it’s so frustrating. I just get super annoyed sometimes and have to walk away and come back another day. The failures teach us and make us better. I certainly have learned some of my best ideas of what NOT to do, haha! I love this dressing, I love spicy dressings and just like Sophie suggestd on sweet potatoes, that is what I do with my Mexican tahini dressing and sweet potatoes…the combo of sweet with the spicy is so fantastic together. I love the pepitas you added, YUM.

      It’s weird how that happens. I take it to mean I need to take a break from cooking – – just wish I had someone to cook FOR me during those times :-)!

    I will be eternally grateful to you for teaching me to thicken up my homemade dressings with nuts and seeds, yum!!     I’ve definitely had weeks like that where whatever I tried to make just didn’t come out quite right. Good idea to go back to basics when you’ve temporarily lost your cooking mojo. 😉 The dressing sounds so yummy and healthy!
