Vegan Mexican Chocolate Waffles An Unrefined Vegan

I’m not going to waste anyone’s time here today.  These are waffles.  They’ve got chocolate and beer in them – but no oil and no sugar – and they are good.  Now go and spend your morning with them.

Ingredients
  1. 1 3/4 cups whole wheat pastry flour
  2. 1/2 cup unsweetened cocoa powder
  3. 1 1/2 tsp. baking powder
  4. 1/2 tsp. baking soda
  5. 1 tsp. cinnamon
  6. pinch chipotle chile powder
  7. pinch salt
  8. 1 tsp. powdered stevia
  9. 1 12 oz. Mexican lager
  10. 4 oz. unsweetened applesauce
  11. 1 Tbsp. flaxseed meal + 3 tbsp. water (whisk until frothy, then set aside for a few minutes)
  12. 1 tsp. vanilla extract
Instructions
  1. The night before making waffles, open the bottle of beer and pour it into a glass. Drink. Now, open a second bottle of beer and pour it into a large measuring cup and place it in the refrigerator so that it goes flat.
  2. The next morning, put a couple of plates in the oven and turn it on to about 200F - to take the chill off of the plates and so you can keep the waffles warm and toasty. Get your waffle iron heating as well.
  3. In a large bowl, combine the flour, cocoa powder, baking powder, baking soda, cinnamon, chile powder, salt and stevia.
  4. Mix the applesauce, vanilla extract and flaxseed meal in with the flat beer. Pour this into the dry mixture and stir until combined. When the waffle iron is hot, lightly spray with oil and then spoon on enough batter to almost reach the edges. Cook for about 4-5 minutes or until crispy and easily removed from the iron. Continue with the remainder of the batter.

      I rarely use maple syrup on my waffles/pancakes – though that’s how Kel likes them. It will come as no surprise that my favorite toppings are peanut butter and banana.

        Yum! I eat them plain mostly so they’re not too sweet. Makes my husband so mad! ‘How can you eat those things without any syrup?’ Like you, I’d rather taste the waffle….banana and peanut butter I could always live with though 😉

    Only 3 things stopping me from making these
    1. I don’t have a waffle iron
    2. All beer on the premises has to pass through Steve first.
    3. I don’t want to make Omni-pee waffles :(

        It means that I don’t want Steve (the Omni) to pass that good Mexican beer (expensive import) through his urinary tract (the only way that expensive imported beer is going to be available to me for cooking purposes) before I can make these waffles. I think I am actually thanking my lucky stars that I DON’T have a waffle iron! 😉

        Haha! Oh my…yes, please DO NOT make these waffles. However, the batter also makes good pancakes ;-). Just use nut milk or water instead of omnipee…oy.

    Annie, I adore the new look! It’s so fun! I got a waffle maker for Christmas and have been making my first ever waffles lately, so I’m excited to try these, especially as they’re oil free! Do you happen to know if powdered stevia equals the sweetness of liquid stevia which is what I have? Google has given me conflicting answers! :)

      I’d start with 20-25 drops of the liquid. My feeling is that the powdered is less sweet than the liquid.

    Mmmmmm, yum! I don’t have a waffle iron but I have a friend who has one and makes excellent waffles, I should pass this recipe on to her. I would love these smothered in maple syrup…

    I think my favourite lazy morning breakfast would be one made for me with freshly baked treats when I’m on holiday somewhere warm and sunny, eating outside. Years ago when I lived in Edinburgh my mum and I would occasionally go to a swanky hotel in the city for breakfast and that was great, too. Big buffets full of baskets of differents bread, rolls and pastries, beautiful plates of fruit, hot food and endless pots of tea and coffee. Worth not eating much the night before.

    Those look AMAZING! I love that they don’t have added sugar. Do you think that the batter would work for making pancakes? My quest for the non-nonstick waffle iron continues.

      Absolutely – you’ll just need to add more liquid to the batter. I think you need to INVENT a non-stick waffle iron ;-)!

    I just made these except I subbed in date paste (just microwaved some dates with water for a few minutes then blended em up) for applesauce and used 10 drops of liquid vanilla stevia. These are great!
