Some books – and they don’t come around very often – are life changers. Such was the case for me with The China Study, by T. Colin Campbell and John Robbins. Because of this book, I once and for all removed processed foods and dairy products from my diet. It was the reason I started this blog: I was so excited and enthusiastic about the way that I was eating and how good I felt that I wanted to spread the word about going plant-based.
Now that The China Study Cookbook, by Leanne Campbell, has been published it seems like a no-brainer; the perfect companion to the study. First, get people thinking about their food choices and then provide them with easy-to-make, whole foods recipes that just happen to be delicious. How could you not get hooked on this way of eating? The China Study Cookbook is packed with 125 recipes for breakfast, breads, salads, appetizers, soups, main courses, side dishes, and of course, desserts. 16 dessert recipes, in fact. Nice. There are lots of full-color photographs (Leann’s son was the photographer) that showcase the food in mouthwatering detail. The China Study Cookbook is the kind of cookbook that would fit well with the family that is cutting back on animal products, as well as with the newbie vegan who needs some guidance, but also with the experienced plant-based cook who is looking for staple recipes for quick, healthful meals.
I am especially excited to be able to share Ms. Campbell’s recipe for Pumpkin Pancakes. Nothing makes me happier than a warm stack of pancakes on Sunday morning. As you can see from the photos, the ‘cakes cooked up beautifully and have a very inviting orange tint. Perfect alongside a cup of chai tea – and for fall mornings.

Pumpkin Pancakes
Makes ~12
2 cups whole wheat pastry flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
1 tbsp. pumpkin pie spice
2 egg replacers (2 tbsp. ground flaxseed meal with 6 tbsp. water)
2 cups non-dairy milk
1/2 cup pumpkin (canned or pureed)
5 tbsp. maple syrup
1/2 tsp. vanilla extract
Preheat a nonstick skillet or griddle over medium-high heat.
Combine flour, baking soda, baking powder, salt, and pumpkin pie spice in a large mixing bowl. Set aside.
In separate medium bowl, mix egg replacers, nondairy milk, pumpkin, maple syrup, and vanilla extract.
Combine the wet and dry ingredients and stir just enough to remove any lumps. The batter should be pourable; if it seems to thick, add more milk.
Use a 1/4 cup or 1/3 cup measuring cup to measure and pour small amounts of batter onto the heated surface. Cook until top bubbles, about 2-3 minutes. Turn with a spatula and cook the second side until golden brown. Serve immediately.

I read the China Study a while ago and was recently thinking that it’s time to go back and reread it… you’ve given me the motivation to do so!
Those pancakes are an utter delight, but then the banana cream springs up, whoa! I love the little hearts you’ve added to each photo, too, very nice job. I haven’t read The China Study but it sounds like a great idea having a cookbook inspired by it.

I read it a few years ago and passed it on to a friend so he could better understand why I’m a vegan and the easy things anyone can do to live a healthier life. The Campbell Foundation has a great newsletter with recipes too which are always yumful…I bet this cookbook is superamazing! Can you imagine growing up with T. Colin Campbell as a dad? Leanne must have fabulous heart-healthy vegan recipes by the thousands!

Your photos are absolutely beautiful! I read The China Study last year and was so intrigued that I signed up for Dr. Campbell’s course at eCornell. I loved it! All your dishes look delicious, but I must try first those great looking pancakes! We are celebrating Thanksgiving at our family cottage and these would be perfect.
These would be an excellent Thanksgiving breakfast! Very homey. I’ve heard of his course, but haven’t checked it out – maybe I should!

I read The China Study shortly after the documentary “Forks Over Knives” came out. I was absolutely in awe of how powerful a whole foods, plant-based diet could be in our efforts to heal a wide variety of ailments and diseases. The China Study is a book that I have been meaning to read very soon. I’m interested in the picture of the “green garden mayo” you have above these comments. I’ll look around on your blog for the recipe. I’m trying to find some kind of dressing that is soy and dairy free for my son who is allergic to soy.

Forks Over Knives is definitely life-changing. It kind of distills the really important parts of The China Study – so you’re getting the same info.

It can be tough going in parts, but is worth the read. Eye-opening.

I have not read the book yet. I see it has rave reviews on Amazon though. I like that the recipes are easy and low fat. I was getting squash yesterday and eyed the pumpkin. That will be my next purchase and the pancakes sound grand! (Deb E)

I made the pancakes this morning, and they were delicious! I loved how the batter was the perfect consistency….I was afraid they would be too thick.

I read it many many years ago and it was a few years after going vegan. Though I”d originally stopped eating meat due to ethical reasons and had done tons of reading on factory farming, it was reaffirming to know that my decision was also beneficial to my health as well.

We made the pancakes just now! They’re dense and tasty. I always felt it was difficult to find a good vegan pancake recipe. What I like is that there is NO OIL or fat in them! (Oil in the pan, yes.) Anyway, thanks so much.
