Meyer Lemon, Lime, & Graham Cracker Parfait An Unrefined VeganI had no idea what I was going to do with the two bags of Meyer lemons I picked up on a recent grocery run – but I couldn’t resist them.  Bright yellow and shiny, I’d never tried one, never even seen them before.  Meyer lemon is a citrus fruit that is a cross between mandarin orange and lemon.  They’re smaller and rounder than regular lemons and have a wonderful spicy smell.

Right after my purchase I heard about the So Delicious 3 Course Recipe Contest and an idea was born: a creamy, tart-sweet, crunchy parfait with Meyer lemon juice as the star – and a bit of lime as character actor.  (Thank you, Sarah, for bringing this contest to my attention.)

Meyer Lemon, Lime, & “Graham Cracker” Parfaits
Makes 6

2 cup raw cashew pieces, soaked for 8 hours or overnight, rinsed and drained
7 dates, soaked for a few hours, drained
1/2 cup unsweetened coconut milk (I used So Delicious brand)
1/2 cup fresh Meyer lemon juice
1/4 cup fresh lime
1/4 cup plain coconut yogurt (I used So Delicious brand)
1/4 cup firm tofu* (not silken), optional
1 tbsp. pure maple syrup
zest of 2 Meyer lemons
zest of 1 lime

2 cups pecans
1 tbsp. sesame seeds
3 dates
1 tbsp. pure maple syrup
1 tsp. ground cinnamon

In a blender, combine the cashews, dates, coconut milk, lemon & lime juice, yogurt, tofu (if using), maple syrup and zest.  Process until very smooth.

In a food processor, combine the pecans, sesame seeds, dates, maple syrup, and cinnamon.  Process until crumbly and of uniform size.

Put 1 heaping tablespoon of pecan mixture at the bottom of each of 6 bowls or glasses.  Top with about 3 tablespoons of lemon mixture.  Continue alternating layers of pecan mixture with the lemon mixture until you’ve used up both. Top with fresh fruit and additional zest, if desired.

*the tofu will make for a thicker consistency

Chocolate Sweet Potato Spice Cake

Chocolate Sweet Potato Spice CakeChocolate cake reminds me of my mother, who in my humble opinion, baked the best chocolate cake on earth.  It was coated in a creamy, buttery frosting that wasn’t too awfully sweet.  This cake is a single-layer, dim tribute to her shining, multi-tiered one – but it is rich, moist, and bursting with warm, complex flavors from the orange and spices.  The sweet potato replaces butter/oil and the frosting couldn’t be easier: melted chocolate chips sprinkled with chopped nuts (toasted coconut would be nice, too).

Chocolate Sweet Potato Spice Cake
Serves 8+

3 cups whole wheat pastry flour
2 tsp. baking soda
2 tbsp. Cafix (herbal coffee)
2 tsp. cinnamon
1 tsp. cardamom
pinch allspice
2 tsp. powdered stevia
zest of one orange
1 1/2 cups non-dairy milk
1 cup orange juice
1 cup roasted sweet potato
2 tsp. vanilla extract
1/2 cup unsweetened applesauce
1/2 cup xylitol (or equivalent amount of sugar)
1 cup walnuts, divided
1 1/4 cups semi-sweet vegan chocolate chips, divided

Preheat the oven to 350F and lightly spray a 10″ springform pan with oil.

In a large bowl, whisk together the flour, baking soda, Cafix, cinnamon, cardamom, allspice, stevia and orange zest.  Set aside.

In a food processor, combine the non-dairy milk, orange juice, sweet potato, vanilla extract, applesauce, and xylitol. Process until smooth.  Pour mixture into dry ingredients and stir until well-combined.  Stir in 1/2 cup of the walnuts and 1/4 cup of the chocolate chips.

Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.  Put the pan on a cooling rack and sprinkle the remaining 1 cup of chocolate chips over the top of the hot cake.  Let sit for a few minutes to melt and then spread the chocolate evenly over the cake.  Sprinkle on the walnuts and gently press them into the melted chocolate.  After about 15 minutes, remove the outer ring of the pan and let the cake cool completely before slicing.

Pop’s Chocolate Chip Cookies with Grapefruit & Anise

Cookies 2Father’s Day.  It’s coming.  Except in my case, I call it Pop’s Day, cuz that’s what I call my dad.  I can’t really send him flowers or a little piece of jewelry like I can my mother on her special day.  He no longer needs ties and has more tools,  shirts and logo baseball hats than he can ever use.  So what do I send my old man to let him know how special he is?  Bake him a batch of (healthy) cookies that host his favorite flavors.

Pop’s Chocolate Chip Cookies with Grapefruit & Anise
Makes ~16

2/3 cup whole wheat pastry flour
1 1/2 cups quick-cooking oats
1 tsp. baking soda
1 tsp. powdered stevia
1/2 tsp. salt
1 tsp. anise seeds, crushed with a mortar & pestle or processed in a spice grinder
3 tbsp. vegan butter
2 tbsp. prune puree
1/4 cup maple sugar
1 tbsp. flaxseed meal + 3 tbsp. water (whisk together and let sit for a minute or two)
1 tsp. vanilla extract
2 tsp. grapefruit zest
1/2 cup vegan semi-sweet chocolate chips

Line two baking sheets with parchment paper and preheat oven to 375F.

In a medium-sized bowl, whisk together the flour, oats, baking soda, stevia, salt and anise seeds.  In a large bowl, cream the butter, prune puree and maple sugar until smooth.  Add the flaxseed meal mixture, vanilla extract and zest and mix well.

Mix the dry ingredients in with the wet ingredients and stir in the chocolate chips.  Drop dough by the tablespoonful onto the prepared baking sheets.  I wet the bottom of a glass to gently flatten the cookies.  Bake for 10-12 minutes, rotating pans halfway through.  Let cool for a few minutes on the baking pans before transferring to wire racks to cool completely.
